Mark Diacono, gardener, cook, and photographer, rejoins us in the bookshop for his fantastic new book HERB: A Cooks’ Companion.
Mark, author of the marvellous Sour, is such an eloquent and lively writer (often reminiscent of the young Nigel Slater) and he will expertly show you how to handle herbs in the kitchen, from infusions to cocktails – like the glowing Allorino cocktail with bay leaves or Lovage Vodka. HERB is the book that will propel you into your garden, balcony or window sill to grow new herbals – Korean Mint, Lemon Verbena and Anise Hyssop.
Who wouldn’t love a Fig Leaf syrup to pour over ice cream or some Shiso Pickled Cucumber to brighten up a salad. There are big, bolstering dishes here too – Laksas with Vietnamese Coriander, seriously fresh Green Ceviche and, one of my favourites, a plate of Lancashire Cheese in Lovage with Cherries, Honey and Lavender.
