The cuisine of the Andes is one of the most contemporary yet ancient in the world. Andina’s recipes have big flavours, vibrant colour and are simple to cook at home. Completely delicious recipes accompanied by magical stories, dazzling photography and beautiful paintings, Andina is the first ever book to capture the food and scenery of the Andes and the spirit of its people.

Andina also signifies a dish, an ingredient or a lady from the Andes. Morales pays homage to his grandmother, an andina and all the women chefs (picanteras) who have shaped this soulful and traditional cuisine.

Morales is the chef, restaurateur and founder of the leading London restaurants, Ceviche Soho, Ceviche Old St, Andina and Casita Andina. In his previous book, Ceviche, he lifted the lid on his native cuisine to showcase vibrant, healthy dishes using lots fish, chillies, corn and citrus fruits. Peruvian cooking is some of the most exciting in the world.
